I first went to Bryant's when living in Kansas City as a student at UMKC. A friend took me to the restaurant and it was immediately a religious experience. Not caring for sweet BBQ sauces or obvious concoctions, I was floored by a combination of spices that, to this day, I can't unravel. I later moved to Phoenix but returned occasionally, taking pictures of the outside of Bryant's (as well as the plate of fries and towering sandwiches to show my friends what they were missing). It's been thirty years now, and I still keep no less than a case of Bryant's on hand at all times out here in Arizona. I'm never without the stuff and it's now required by my group of friends (who've never visited Kansas City) that I smoke some ribs (mesquite) with Bryant's sauce whenever the parties come around. I'm a Bryant's junkie, inclined to throw the sauce on a lot more than just meat. Maybe someday they'll make Bryant's BBQ Cereal - I'll buy a truckload.
